Not all beans have the ability to sense when to eat again. The chefs who prepare the beans are familiar with the route system in the area. Every day, a family from the hamlet of Harasta in northern Syria sets up shop at the Central Market. Over roasted honey and cheese for supper, they will have an opportunity to discuss the difficulties of carrying their own food. Beirut receives its olive oil from Aleppo and Turkey. To get the olive oil to Lebanon, the family will need to spend many weeks sailing a boat thousands of kilometers across the Mediterranean Sea. After navigating the lake, the mountains, and the backwaters, they will cruise to the coast of Libya.
